“The vegetables from his own garden are delicious!” says Shimizu with a smile. And that’s because he always grows only things that he’s enjoyed eating himself.
After the COVID-19 pandemic, Shimizu says, “I decided to spend the remaining half of my life climbing a different mountain than before.” He feels every day that his life has been enriched by having a farm. Tonowa Farm, which he started with the desire to broaden his circle of acquaintances, “make friends with local people through the farm and learn about the natural environment,” is now in its fourth year. While cultivating around 60 different crops per year, he also regularly holds events. He always shares tips with the chefs at Sato Rogue about soil preparation, growing vegetables, and even how to eat them.
