Private farm

This private farm was created by filling the fishponds of a former fish farm with soil. The soil is locally sourced, with branches and leaves cut down on the premises laid underneath, and gravel and charcoal laid even further below that to improve drainage to the drainage holes. This is an experimental attempt to maintain a stable soil condition. Here, the chef grows vegetables using organic farming methods with the cooperation of local residents.
